At Jones Winery Restaurant, their sous chef is Sri-Lankan and along with head-chef, Briony they have crafted a one-night-only degustation menu that celebrates the unexpected harmony of these two food cultures. The menu is based on Hiruni’s family favourites. Think watalappam, lavariya, hoppers and kokis, using cinnamon from her family’s farm.
This carefully curated menu highlights the finesse of traditional French techniques while embracing the aromatic spices, tropical ingredients and bold character of Sri Lankan gastronomy. Each course is thoughtfully paired with estate-grown wines, selected to enhance both the delicacy and intensity of the dishes.
